Spinach and Feta Quinoa Salad Recipe

Another great recipe from Elite’s fresh and local food service partner, FitFoodMKE…this spinach and feta quinoa salad can be made ahead and stored in the fridge. A great option for lunch or perhaps as a summer picnic side.

Spinach and Feta Quinoa Salad Recipe

Serves 4

Ingredients:

  • 6 cups water
  • 3 cups tri-colored uncooked quinoa
  • 1 large cucumber
  • 1 medium red onion
  • 1 cup dried cranberries
  • 1/2 cup feta
  • 3oz fresh dill
  • 3oz fresh parsley
  • 3oz fresh spinach
  • 1 teaspoon salt

Directions:

Add water and salt to a pot and bring to a boil. Once boiling add quinoa and stir every 2-4 minutes. Once quinoa has “sprouted” drain and chill. Dice cucumber and onion then add to quinoa. Roughly chop fresh parsley and dill and add to quinoa. Add spinach, dried cranberries, and feta. Stir thoroughly and serve cold.
